Dumplings (½È×Ó ji¨£ozi) are part of the staple diet of Beijing locals and are very popular in Northern China. Dumplings typically consist of minced meat and diced vegetables that are wrapped within a roll of thin dough and sealed up to create a small pouch. Most of the time they are eaten steamed, but can be fried to create a crunchy outer texture. Dumplings are extremely versatile, as their fillings can essentially be anything you want, and can cater for both vegetarians and non-vegetarians alike. Personal favorites here among China Unipath-ers include the egg and tomato dumpling, and the beef and vegetable dumpling. Dumplings are usually accompanied
by a soy-vinegar dipping or just plain black vinegar (add hot chili
sauce for those who like their foods on the spicy side). Perfectly delicious!
